Tasca 61 Bio is a well-kept secret on Viana Street, in the historic heart of La Laguna. Since 2010, they've championed clean, local cuisine: seasonal fruits and vegetables from planned organic gardens, certified ingredients when referring to "organic," and a golden rule in the dining room and kitchen: fresh produce, no microwaves. The menu is deliberately short and changes with what's coming in from the fields; this allows them to maintain a high standard in each dish and a very warm welcome for everyone sitting at the table.
Among the staples that best define their style are the House Salad (mixed leaves, toasted seeds, and raw seasonal vegetables), the Vegetable Salad with vegetable mayonnaise, the Eggplant Gratin with homemade tomato sauce, mozzarella, Parmesan, and basil, or the Icod Eggs with truffle cream and Palo Alto potatoes. For lovers of spoon-frying, there's always a dish of the day, subject to availability (lentils, chickpeas, or beans). And yes, there's room for carnivores: a unique offering of El Hierro beef—from Carnicería El Pinar—reminds us that sustainable animal protein can also be achieved through local products. Rounding out the menu are a vegetable lasagna with spelt slices (sometimes colored with beetroot or turmeric) and an artisanal beef lasagna.
The wine list is brief but purposeful: local organic wines by the glass (such as Amaral or Pagos Reverón) and a few natural/biodynamic nods, as well as Canarian kombucha and natural lemonade. Everything happens in a small, unpretentious space, where proximity reigns: you come to eat well, calmly, and with the peace of mind of knowing where what's on your plate comes from.
